Is there a way to change the default page zoom in preview?
I know that I can zoom in so that a document fills the preview pane, but I've scanned the forum and can't find a way to set this as default.

It depends on the file type. For PDF files, the zoom factor is persistent; for plain text files, you can choose the font and size to use using the Tools menu, and this is also persistent; for HTML and RTF documents, the default size is always used.
