Can you confirm whether encryption is working on FoxTrot Pro 6.0.2?
I've gone into 'Manage Indices', selected an existing index, ticked
'Encrypt and Rebuild', entered a password and verified it and waited for
the rebuilding to complete. After that,I can still search that index and
see the results without being asked for a password. I've tried rebuilding
the index again and then restarting FoxTrot Pro, but its still searchable
without a password.
The same is true if I index a new folder and select 'Encrypt Index' from
the outset: I can see the search results and the found documents without
being asked for a password. This is with High Sierra.

As indicated in the dialog that is displayed when you check the encryption checkbox, the purpose is to encrypt indices that you use on iOS using FoxTrot Attaché (especially if you synchronize them using Google Drive or an external web server).
The index file is actually encrypted on your Mac, but the but the encryption password is currently remembered on macOS; so you only need it on iOS, or if move your index file to another Mac.
