OK, with FT Pro 7.5.2 I try to select "FoxTrot Preview" (which is what I usually select to view PDF files) but it changes to "Plain Text (Last Indexed Version)."
I can see EPUB files in the preview pane if I select "Quick Look Preview."

And now with FT Pro 7.5.3 "FoxTrot Preview" is working properly, but ten minutes ago (before trying it with 7.5.2) it wasn't.
