Is there a way we can make it update faster than 1 hour? Can we control this through a script or task scheduler?
We would not recommend performing a full update of a large index more often than once an hour. You can however automate partial updates from an AppleScript (using the command: update folder)

Is the index unavailable to users to search when an update is in progress?
The index remains available, but search speed is quite slower; users may have to wait a few seconds and sometimes more before the search starts.

Is there a way to control how much CPU the indexing processes uses on the server when it is updating?
Not directly, but you can take a look at our FAQ
