Turns out I didn't dig deep enough into the Settings. My files were in folders where only specific filetypes were indexed. e.g. I had text files in the Pictures folder and video files in the Music folder. Found this by highlighting the checked folders and seeing an additional menu/dialog appear where only specific types were set to be indexed. When I selected all the filetypes and did an index update, my searches worked.
