I am wondering if the preview of PDFs that Foxtrot provides can allow what
Acrobat calls "overprint preview"?
We are a flexographic printing company and many of our graphic files
contain a overall white plate that sits on top of the artwork. If we use
Foxtrot to search for files the ones with the white plates just show (in
the preview window) the white and not the other underlying art.

Hello,
FoxTrot’s preview supports whatever Apple’s Preview application will display. If one works, the other one will.
If this does not satisfy your needs, you can always open found files in Acrobat from FoxTrot Pro instead of opening them within FoxTrot Pro application itself.
