I have installed the trial version of FoxTrot Pro (6.6.3) with macOS 10.15.
Is it possible to search for emails with attachments (for example, emails
from a specific person between 1 January 2019 to 31 January 2019 but only
if the email has an attachment which is a pdf)?

Not in a really supported way, but you can add as a secondary criterion:
[other metadata] [includes all of the words] ["application/pdf"]
where this search string is either the MIME type of the attachment, or its
filename.
You can option-click a found file to see the contents of its "other
metadata" field, so you can see if there is something relevant to search
there.

And you can also add other criteria for the date and sender, of course:
[author, contact or recipient] [includes all of the words]
["someone«~at~»somewhere«|dot|»com"]
[then filter by date] [creation date] [is between] ...

looking for.
Concerning "[other metadata] [includes all of the words]
["application/pdf"]"
Is there a list of other metadata that it is possible to search for?

For example, sometimes I just want to see folders based on name (eg if the
name of the folder contains "2019_119"). Applying what you have written " "[other
metadata] [includes all of the words] ["kind/folder"]" does to produce a
list of folders with "2019_119" (and [name, subject, title][includes
at least one of the words]["2019_119"].
Ideally is a description of how to do such searching would be welcome
(pages such as this: http://help.foxtrot.ch/foxtrot-professional-search/searching /index.html
do not seem to provide the information).

No, there is no "list of other metadata"; the [other metadata] criterion
let you search amongst the various attributes that Spotlight importers can
return, and that does not fit in FoxTrot's predefined metadata fields (i.e.
filename, subject, author, keywords and tags). But as I indicated, you can
option-click a found document to see the actual content of this [other
metadata] field, and determine if there are something relevant to search
for there. For Apple Mail messages, amongst other things, this field
contains the MIME type of the attachments (e.g. "application/pdf", for PDF
files), and the attachment filenames.
When you search for a single word (or for a single "quoted string"
containing consecutive words), choosing [includes at least one of the
words] rather than [includes all of the words] does not change anything.
To specifically search for folders whose name contain [2019_119], search
for [filename] [includes all the words] ["2019_119"], then select the [file
type] [folder] category in the left pane, once you have executed the
search, to narrow down the results to folders. You may also use the [the
apply advanced filters] [file name] [...] [...] for more precise searches
on filename or pathnames, including regular expression searches. There will
also be new features related to this kind of searches in version 7, whose
beta version will be made available soon.
