If I understand correctly your situation, the Mac hosting the FoxTrot index is physically used by various people who should not have access to the NAS; in this situation, you can probably use "fast user switching" (in the "login options" of the "users & groups" system preference pane), then use a dedicated macOS user account for FoxTrot, and leave the machine accessible to people with the "guest user" account, or another account. Volumes mounted from a user session should not be accessible from other sessions.
